Cold brew is one of the hardest things to mess up if you ask me so i would just brew it room temperature.

But in short cold brew coffee can go bad and if you store it at room temperature it will go bad pretty fast.
Even so you ll need more than just 8 hours to cold brew a good cup of coffee.
